It has been a long and exciting journey, and we're glad to finally be able to open our doors to you! 
Folly, loosely defined, means foolish. Many would argue that we are foolish to build a brewery, rebrand, and basically start all over again. While we may (on occasion) be inclined to agree, we are extremely proud of how far we've come, the hard work of our brewers, and your support! 

On these pages, you will find upcoming events, notes from the brewery, and other random (and hopefully exciting) pieces of information that we think you'll enjoy!

From your encouragement, we have expanded our nanobrewery and soon you will see our beers pouring in other bars and restaurants.  We are now in the planning stages of our bottle shop, which will allow us to sell our beer directly to you, our biggest fans. 

We invite you all to join us in our next chapter with our new Community Supported Brewing (CSB) program. Modeled after programs that exist among some of our rural neighbours, our CSB allows you to directly participate in our future and have access to some awesome stuff! 

We have created a tiered program where you can purchase "futures" in our business. The program runs on an annual subscription, and launches September of each year. 

$500 = a $540 house account (redemption maximum of $45 per month). 

$1000 =a $1200 house account (redemption maximum of $100 per month).

$2500 = a $3000 house account (redemption maximum of $250 per month).

Each account also grants members first access to our events and holiday bookings. All members will also be invited to our annual appreciation dinner, and will have first access to our bottle shop when it opens. Our brewers are also working on a very special bottle-aged beer, which will only be available for members. Can't make it one month? Your memberships are transferrable, so feel free to lend your card to a friend, colleague, or family member.

Memberships are good for one year and are available only until the end of October. We will open up membership annually via our online blog.

Folly Brewpub can be reserved for private or semi-private functions. Our staff are trained to work with dietary restrictions, bar preferences, and groups of all sizes. 



Brewing System

The Folly Brewing system produces about 1.5 hL of wort in a single run, which we double batch into 3 hL fermenters. We’ve got 8-3 hL fermenters, meaning we can produce a fair bit of beer with a small system. It also means we can brew many different fun, yeast driven beers. Like our kitchen, our brewing is open-concept, so you can see where your beer is made and, if you're lucky, peer in at our brewers as they finish brewing up their latest batch.

Brewing Style

Our approach to beer at Folly Brewpub takes inspiration from Belgian traditions but embraces new hops and mixed fermentation techniques. There isn’t really a proper name for the approach we’re taking. Sometimes it’s called rustic (like your local breakfast sandwich), sometimes farmhouse (one of those downtown Toronto ones, you know), and sometimes it’s just called Belgian brewing (even though our ancestry.com accounts can’t find any connections). We brew fun, bright, and spicy beers.


We’re not Belgian farmers, so we’ve taken their saisons as inspiration for our own. Praxis is what we like to describe as a “new world” saison. We greatly admire “old world” saisons so we do not spice our beer, we judiciously use hops (Styrian Golding and Amarillo), mash our Pilsner malt carefully, carbonate liberally, and tend to our house culture of yeast with the attention deserving of a housecat. We believe good saison can exist without tricks and gimmicks. It is for drinking.

  • Hops: Magnum, Sytring Goldings, Amarillo

  • Yeast: House Dupont

  • Malts: Pilsner, Vienna, Carafoam

  • OG/ FG: 12 Plato/ 1.5 Plato

  • pH: 4.4


Impostor Syndrome

Some days we can’t understand just how we landed here. Through luck and tricks it often seems. On those days we turn to Impostor Syndrome, an American IPA that masquerades as a hoppy saison, and hope no one notices we shouldn’t be here. Loaded with Galaxy and Sorachi Ace hops, Impostor Syndrome has loads of tropical fruit character - almost coconut like - with an additional fruity contribution from the Brett Claussenii in our house mixed fermentation culture.

  • Style: Farmhouse IPA

  • ABV: 6.2%

  • Hops: Magnum, Galaxy, Sorachi Ace

  • Yeast: House Light Blend

  • Malts: Pilsner, Munich I, Carafoam, Caramunich I, Carahell

  • OG/ FG: 12 Plato/ 2 Plato

  • pH: 4.2


Flemish Cap

Both our brewers hail from the rocky island of Newfoundland while our masterful chef and co-owner Luis hails from sunny Portugal. The Flemish Cap lies outside the two hundred mile limit of Canada’s territorial waters and has long been a continuous mixing point for the two fishing cultures. International cooperation aside, you don’t need to be a maritime lawyer to enjoy this beer. Clean and crisp this beer is an exercise in old world simplicity with a little new world complexity.

  • ABV: 4.5%

  • Hops: Magnum, Saaz

  • Yeast: Escarpment Labs’ New World Saison

  • Malts: Pilsner

  • OG/ FG: 9.5 Plato/ 0.5 Plato

  • pH: 4.4



A great man once said “we cannot play ducks and drakes with a native battery of idioms which prescribes egregious collocations of vocables.” We totally agree! To an academic inkhorn is a total throw down slam meaning you’ve written a paper so full of pedantic language that only people who pontificate about Fellini films behind you the line at the cinema will understand you. Our Inkhorn is a tribute to their folly. A dark, malty, and slightly tart bruin with notes of dried red fruit from both our malt selection and our brett lambicus house culture, Inkhorn is your perfect companion if you're interested in Mozart, James Joyce and ...other activities.

  • ABV: 6.5%

  • Hops: Magnum, Saaz

  • Yeast: House Dark Blend ("George")

  • Malts: Pilsner, Caramunich I, Melanoidin, Special W

  • OG/ FG: 15 Plato/ 4.5 Plato

  • pH: 4.3

Established October 2015, Folly Brewpub is the perfect place to gather. Stop in and feel like part of the family. 


At its core, Folly Brewpub is a four person team. Owners Michelle and Luis run the bar and kitchen respectively, while brewers Chris and Christina brew the beer. We work together to create a comfortable place to come and enjoy tasty food, beer, whiskey, and company. Along with a knowledgeable serving staff and a talented kitchen crew Folly Brewpub also works with local producers of yeast, suppliers of hops, and collaborates with other brewers to provide everything you could want an a brewpub.


Folly's focus is on food-friendly Belgian styles like saisons, sours and farmhouse ales. Though it currently has only 10 taps to showcase house beers like Inkhorn (a farmhouse bruin) and Imposter Syndrome (a farmhouse IPA), Folly consciously highlights the talents of other small local breweries like Rainhard and Burdock.  Read More  Now Magazine
