Revolution Series: Fructidor

Autumn officially made an appearance, but we are still remembering the summer with the next line up in our Revolution Series, Fructidor. Beers brewed for this series find their inspiration from the French Revolution Calendar; each beer is meant to reflect the descriptive month it was brewed in. 

Coming from the Latin fructus, "fruit," Fructidor was designed to highlight our favourite Ontario fruit - peaches. Brewed during Ontario's peach season, Fructidor is brewed with Brett C and Bruxellensis-Trois, which adds brightness and highlights the fresh peaches we lovingly pitted before adding to the fermenter.

  • Hops: Magnum, Sytring Goldings
  • Yeast: House Light Blend (Saison yeast, Brux Trois, Brett C.)
  • Malts: Pilsner and Vienna
  • OG/ FG: 15 Plato/ 1.2 Plato
  • pH: 4.1
  • Other: Ontario Peaches

Aroma of soft peach (floral, like peach blossom), light honey, and bready malts. Taste has bright peach, lemon, honey, and a touch of pear and pineapple from the brett. A lively peppery finish.

Thermidor - Nelson Sauvin Dry Hopped Saison

  • ABV: 5.8%
  • Hops: Magnum, Amarillo, & Nelson Sauvin
  • Yeast: House Saison Yeast
  • Malts: Pilsner, Rye, & Melanoidin
  • OG/ FG: 12 Plato/ 1.3 Plato
  • pH: 4.2
  • Other: French Oak infused with Henry of Pelham's 2013 Sauvignon Blanc (Niagara Peninsula, ON)

Generously dry hopped with Nelson Sauvin and further aged with Niagara Sauvignon Blanc soaked French Oak, this beer is reminiscent of warm summer nights as fall approaches.

Thermidor, mid-July to mid-August, was based on the Greek for “summer heat.” Golden amber, Thermidor has the unmistakeable gooseberry and wine-like aromatics typical of New Zealand Nelson Sauvin hops with a touch of stone fruit and citrus. It has a light body with bright citrus and a peppery finish. There is a light tannic complexity from the oak, with a lingering juicy orange finish. 5.8%.
