SHADOW PUPPETS, TABLE BEER, 4.0%
In Plato's allegory of the cave, the philosopher was supposed to enlighten the prisoners of the cave through showing them that reality was not, in fact, the shadows cast on the cave wall, but rather the figures casting those shadows. After a long and sluggish winter, it feels a little like we're all coming out of a cave, enlightened by the warming sun and maybe, just maybe, a light spring beer to enjoy while basking in it.
Our spring seasonal, Shadow Puppets is a Belgian-inspired table beer (something like a patersbier!) which uses loads of spicy rye to create a flavorful and full bodied lighter beer. We use Escarpment Labs' "Wild Thing" (a wild brewers yeast found in an Ontario apple orchard) to create some light clove and spice aromatics.
